when life hands you lemons - part two

another cool thing you can do with lemon curd is to fill a lemon cake with it. I love anything lemon and I have never made a layer cake before and this was my first attempt. Even the most simple cakes never turn out for me. They typically bake around the edges and fall flat in the middle. This time I purchased Rose Levy Beranbaum's The Cake Bible along with every professional cake tool I could get my hands on and I faithfully followed every instruction, measurement, time advice and tip in the book. I wanted a small, high cake a la Nikole Herriott. The cake was......ok. Frosting hides many flaws. I changed the size of the pans from 9" to 6" inch pans and made the cake small and tall - except I overfilled the pans. I should have filled four small pans with the batter instead of three. The cake tasted pretty good, and the curd was lovely. Next time I will try chocolate with a ganache frosting rather than the buttercream - and I will fill my cake pans properly. Practice does, I am sure, make perfect.

By the way... right now, I am enjoying myself in San Francisco :)
