i promised last week

I promised I would give you the recipe for the oatmeal, chocolate chip loaf so here it is. This loaf is not too sweet, hence why it is perfect with Nutella or orange marmalade on top, or I love it with a sharp cheese!  You can layer the dry ingredients into a 1-quart canning jar and give it away as gifts - just remember to write out the recipe and include it.  I found this recipe in a Yoga magazine and absolutely love it.

Oatmeal Chocolate Chip Loaf

1 cup all-purpose flour
3/4 cup whole wheat flour
3/4 cup rolled oats
3/4 cup light brown or raw sugar
1 1/2 teaspoon baking power
3/4 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1/3 cup chopped walnuts
1/3 cup miniature chocolate chips

1 cup butter milk
2 eggs
1/4 cup canola oil

Mix all the dry ingredients in one bowl.
Mix buttermilk, eggs and canola oil in a separate bowl.
Add wet ingredients to the dry and mix until everything is just moistened (batter will be lumpy).
Butter and flour (I just used baking spray) a loaf pan and pour batter in.
Bake at 350F until a wooden skewer inserted in the center of the loaf comes out clean  (about 40 minutes).
