making do
It's one of those days; I don't feel like leaving the house and I scrounged my pantry for something for dinner. I had two chorizo sausages in the fridge, a couple of cans of really nice Italian tomatoes, garlic and dried herbs....and some mushrooms that had seen better days. No matter - I fried up the smashed garlic gently, added the canned tomatoes and dried spices (basil, oregano, dried chilli flakes) and simmered it all for an hour. Then I added a bit of balsamic to it (maybe a teaspoon or two!) and mashed it all up into a fabulous marinara. Cooked some spaghetti and topped the whole thing with the fried up chorizo, mushrooms and some freshly ground parmigiano ...need I say more!

Beautiful images and is that a Le Creuset pot? I have one in the very same colour, I love it to bits. Your making do sounds like a feast, somehow your cupboard is never bare when you have chorizo.
I love just throwing a meal together. Ollie and I have been doing it a lot what with the fluctuating weather we have here!!

Nice to stop by and hear what you've been up to. I'm with you on the creative hibernation - any more joy with the meditation? I bought a book on mindful knitting thinking that might be perfect for me - turns out I'm rubbish at it too! It feels like there is no time for it - I know it will make time for me - but oh - so - hard to get over that hurdle!

Chorizon is kind of like bacon, meaning everything is better with it. This recipe sounds perfect.
Sounds delicious, a perfect scratch meal - you have me craving chorizo now. I do like your yellow casserole dish too.
