We are drinking coffee and lazying around the house. We did some shopping at a tiny little gallery nearby, featuring Canadian artists and buying one-of-a-kind items….we are NOT setting foot in any malls or buying plastic items made in China…however, we would LOVE to visit China. We are listening to Willie Nelson sing "Frosty the Snowman" like a hundred times over. The human one of us ate a wonderful salad for lunch because if she consumes one more bonbon or piece of cheese she will puke!
What is in the salad?
lettuce leaves, pomegranate seeds, avocado, orange slices, toasted sunflower seeds
What is the dressing?
freshly squeezed orange juice - oh, about 1/4 cup
3 tblsps of an awesome virgin olive oil
1 tsp of honey
tiny bit of salt and freshly ground pepper
Whizz all the dressing ingredients and pour on the salad.
Where did I find this recipe? Glad you asked….I adapted this from Janet's recipe….her original version can be found at the gardeners' cottage - Janet is a genius and her blog makes me very happy!!
